Thus, Jim composed a concise poem this morning on the topic, while mine is long, but we both set out to prove him wrong. Edam, Havarti, Brie, Gouda... Experts on the subject disagree. Since my dad was a dairy farmer I Grew up eating cheese, but only two Types, Swiss and longhorn. The smell of Grandma's limburger Cheese made me gag. A pleasant childhood memory is Walking with my mom into the Cheese factory in Bucyrus and Selecting a block of Swiss, the more Holes the better, but it needed to be Mild, not over ripe. (Rachel inherited my aversion for Smelly cheese. At my brother's house she actually Vomited when she smelled the Lasagna baking in the oven. Her supper was cereal.) As I've matured, I've expanded my Palate, barely. I am still very picky and will never, ever Allow brie, blue cheese, feta and a Hundred others enter my mouth only to Find myself spitting it out. And I limit myself since I'm leaning toward the "Bad for you," group, especially the Varieties that are high in fat. But when I'm at a buffet and see the cubes of Swiss, marble or longhorn cheese I pop a Chunk or two or three into my mouth and savor The flavor of my childhood. And I refuse to feel one bit guilty. |
